Recipe: Lime Cookie Biscuits by Great Scotland Yard Hotel

Why not celebrate Afternoon Tea Week with a delicious tea-time treat in the comfort of your own home? The pastry team at Great Scotland Yard Hotel have kindly shared their recipe for Lime Cookie Biscuits, featuring on their Platinum 22 Jubilee Afternoon Tea menu in partnership with Floris London.

You will need:

280g icing sugar
300g unsalted butter
10g salt
120g pasteurised egg yolk
140g almond powder
400g T55 flour
30g lime zest

Method:

1. Paddle icing sugar, lime zest and butter until soft.

2. Then, slowly add the egg yolk until well incorporated.

3. Add the flour last and mix until well combined.

4. Allow to rest for two hours.

5. Roll dough to 2cm thick

6. Cut with crown cookie cutter

7. Bake at 160° for 10 - 12 minutes

8. Decorate as desired
